Date-Sweetened Pumpkin Spice Latte

When we think of cozy fall drinks, of course pumpkin spice lattes are the first thing that comes to mind

This comforting drink is made with cashews, dates, coffee and spices, putting a delicious and healthy spin on the classic pumpkin spice latte.

INGREDIENTS 

2 cups brewed coffee
1/4 cup raw cashews
2 Tbsp. pumpkin puree
1/4 tsp. cinnamon, ground
1/8 tsp. ginger, ground
Pinch each of ground nutmeg and clove
1-2 Medjool dates, pitted (or maple syrup to taste)

DIRECTIONS

  1. Prepare your coffee with your method of choice. 
  2. In a high-speed blender, add the remaining ingredients, along with the prepared coffee. Blend for 30 seconds or until smooth and frothy. Serve immediately.

NOTES: 

If you don’t have a strong blender, there may be pieces of dates or cashews left in the latte. If this is the case, you can strain it using a fine mesh sieve or nut milk bag. This shouldn’t be an issue with a good high-speed blender.

Note that this latte is not overly sweet. One date makes it lightly sweet, which is perfect to my taste, but if you have a bigger sweet tooth, I recommend using 2 dates or maple syrup to taste.
