This comforting drink is made with cashews, dates, coffee and spices, putting a delicious and healthy spin on the classic pumpkin spice latte.

INGREDIENTS
2 cups brewed coffee
1/4 cup raw cashews
2 Tbsp. pumpkin puree
1/4 tsp. cinnamon, ground
1/8 tsp. ginger, ground
Pinch each of ground nutmeg and clove
1-2 Medjool dates, pitted (or maple syrup to taste)
DIRECTIONS
- Prepare your coffee with your method of choice.
- In a high-speed blender, add the remaining ingredients, along with the prepared coffee. Blend for 30 seconds or until smooth and frothy. Serve immediately.
NOTES:
If you don’t have a strong blender, there may be pieces of dates or cashews left in the latte. If this is the case, you can strain it using a fine mesh sieve or nut milk bag. This shouldn’t be an issue with a good high-speed blender.
Note that this latte is not overly sweet. One date makes it lightly sweet, which is perfect to my taste, but if you have a bigger sweet tooth, I recommend using 2 dates or maple syrup to taste.
