This is a healthy breakfast treat that is super quick and simple to make. Loaded with strawberries and bananas, it’s delicious and full of goodness.
Makes 2 servings
INGREDIENTS
• ½ cup frozen strawberries
• ¾ cup frozen bananas
• 4 Tbsp. plant yogurt
• ⅓ cup plant-based milk
• 1 tsp. pitaya powder (optional: for a pretty pink colour)
OPTIONAL TOPPINGS:
• Edible flowers
• Crushed pistachios
• Quinoa Puffs
• Mint leaves
DIRECTIONS
1 Add the fruit, yogurt, pitaya powder and a splash of the plant-based milk to a food
2 processor or a high-powered blender.Process/ blend thoroughly, for 1-2 minutes until smooth, pausing to add more milk and scrape the mixture down from the sides of the processor/ blender as needed.
3 Serve straight away with your favourite toppings. Served here with slices of banana, edible flowers, crushed pistachios, quinoa puffs and mint leaves.
