Forget the typical on-the-go breakfast sandwich packed full of empty calories and unhealthy fats that won’t do your body any good! Instead, start your day with this wholesome alternative that will keep you satisfied and nourished until lunchtime. If you prefer savory breakfasts, this is the sandwich for you. You can use any kind of mushrooms and herbs for this recipe, and it’ll taste absolutely delicious.
- 2 Tbsp. coconut oil
- ½ large onion, chopped
- 2 cloves garlic, chopped
- 1 large tomato, chopped
- 8 button mushrooms, sliced
- 1 tsp. oregano
- Salt and black pepper, to taste
- Small bunch of chopped cilantro leaves, finely chopped
- ½ avocado, mashed
- 2 sprouted-grain English muffins, toasted (can substitute with 4 sprouted-grain bread slices)
Heat a skillet to medium and add the coconut oil. Add the onion and sauté until tender, about 5 to 7 minutes. Mix in chopped garlic and sauté until fragrant, about a minute.
Add the chopped tomatoes, sliced mushrooms and oregano, salt and pepper and sauté until they start to caramelize and turn golden brown, about 10 to 15 minutes. Add the chopped cilantro, give it one more stir, turn the heat off and set the skillet aside. Spread the mashed avocado evenly between the toasted English muffin, covering only the bottom side. Top the avocado with half of the mushroom mixture and any additional healthy toppings of your choice (sprouts, fresh tomatoes, homemade ketchup, etc.) Cap it with the remaining half of muffin.
