Pao de Queijo is eaten across South America, often for breakfast with a hot cup of coffee. These little bites of cheese bread are delicious any time of day.
- 100ml milk
- 75ml vegetable oil
- Pinch of salt
- 250g tapioca flour
- 125g cheese, such as parmesan, grated
- 2 free-range eggs
In a small saucepan, simmer the milk and oil until warm. Sprinkle in the salt and remove from the heat. Pour the warm milk over the tapioca flour and mix well. Add the cheese and beaten egg. Continue to beat the dough until smooth and well combined. If the mixture is too wet, add a sprinkle of tapioca flour. Knead the dough into small balls and place on a lined baking sheet. Bake in a 350F oven until the cheese balls are golden brown, about 18-20 minutes.
