Date Energy Balls

High in carbohydrates, low in fat with protein to boot, these easy-to-make energy balls are the ideal fuel to carry on your next ride, run, hike or paddle. These treats are vegan and can be made with gluten free oats.

Ingredients

  • 8 oz. (220g) dates, pitted (If dried dates, pour boiling water on top and let soak 5 minutes. Drain well and squeeze out excess water).
  • 3 Tbsp. all natural almond butter
  • ¼ cup pumpkin seeds
  • ¼ cup craisins
  • ⅔ cup rolled oats

Directions

Pulse pumpkin seeds in food processor. Add the dates and pulse until they form small pieces. Add oats, craisins and almond butter and pulse until combined. Roll into 1-inch balls (about 25-30g each). To set, pop in freezer for 15 minutes. Store in an air-tight bag or container in fridge for up to a week. Freeze for long-term storage.
